SHOEPEG CORN CASSEROLE
This recipe is from Upsider Emily Shumate and it’s been in her family for over 30 years.
1/2 Cup chopped Celery
1/2 Cup chopped Green Pepper
1/2 Cup chopped Onion
1 Can French Cut Green Beans- drained
1 Can Shoe Peg Corn
1/2 Cup shredded Cheddar Cheese
1 Can Golden Mushroom soup
1 Cup Sour Cream
1 Stick of Butter
1 stack of Ritz Crackers
Step 1: Preheat oven to 350 degrees.
Step 2: Mix first 8 ingredients together and put in greased casserole dish (9 x11).
Step 3: Crush Ritz Crackers and mix with melted butter. Additional Crackers may be needed.
Step 4: Cover top with crackers and bake at 350 degrees for 45 minutes.
